Huevos Rancheros


If you know how to fry an egg, you can turn it into a traditional Mexican breakfast of Huevos Rancheros!  This versatile breakfast or brunch favorite is healthy, easy-to-make, appetizing, and delicious!
 





Ingredients:


Eggs
Tortillas (corn or flour)
Salsa (mild or hot) 
-or-
Enchilada sauce 
(make our salsas found under the Saucy Salsas tab above)

Optional Accompaniments:


Cheese, grated for topping
Avocado slices on the side
Black beans, cooked on the side
Refried Beans on the side, or spread over the tortilla


 

Directions:


Fry eggs stove-top in a frying pan, using enough oil to prevent sticking, or fry them right in the salsa or enchilada sauce (at least 1/4 cup per egg) until eggs are cooked to your desired firmness.

While the eggs are cooking, warm up beans and heat the tortillas.  Serve on a plate arranging the eggs over a warm tortilla (you may like to add salsa, enchilada sauce, or refried beans over the tortilla before adding the eggs).  

Pour warm salsa (or sauce) over the eggs, add beans or avocado slices on the side, and then sprinkle optional grated cheese over the entire dish.  Savory nutrition the whole family will enjoy!
